Ingredients (2 persons' portion)

4 large eggs
A (50 ml of dashi-jiru (Japanese soup base), 2 tablespoons maple syrup, 1/2 teaspoon thin soy sauce)
vegetable oil
grated giant white radish
  1. Break the eggs into a bowl, and beat lightly. Add the ingredients of A and mix well.
  2. Heat a frying pan and coat it with the vegetable oil. Pour a small amount of the egg mixture into the pan, and tilt it so that the mixture spreads over the bottom. When the surface of the egg sheet is half cooked, pick up the far end of the sheet, and roll toward you. Repeat this rolling operation until all the egg mixture is used up. Remove from the pan and slice into easy-to-eat sizes.

Point & Advice

If dashi soup base is not available, mix water with dashi-no-moto (Japanese soup stock powder), according to the instructions on the package.
This recipe uses a square frying pan designed for making omelets.
Add some oil each time you roll an egg sheet as described in 【2】. Too much oil ruins your chance of cooking a good omelet.
Garnish with grated giant white radish and dip in soy sauce if you like.
